Prepare the Ingredients

Begin by rinsing the fresh oysters under cold water. Scrub the shells to remove any sand or debris.

Shuck the Oysters

Using an oyster knife, carefully shuck each oyster, discarding the top shell. Place the oysters in a shallow bowl, making sure to retain the liquid inside each shell.

Prepare the Cucumber

Thinly slice the cucumber into rounds, then cut the rounds into quarters. Set aside.

Make the Dressing

In a small bowl, combine the calamansi vinegar, umeboshi paste, salt, and black pepper. Mix well until the umeboshi paste is fully incorporated.

Assemble the Dish

Drizzle the dressing over the shucked oysters. Top each oyster with a few pieces of cucumber.

Garnish and Serve

Sprinkle fresh cilantro over the oysters for garnish. Serve immediately with extra calamansi vinegar on the side.
