Dough Preparation

Activate Yeast
In a small bowl, mix warm water (1.5 cups) with honey (2 tbs) and active dry yeast (2 tsp). Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine whole wheat flour (4 cups) and salt (1 tbs). Once the yeast mixture is frothy, pour it into the flour mixture and mix until a dough forms.

Knead Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Shaping and Baking Pretzels

Preheat Oven
Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

Shape Pretzels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and twist it into a pretzel shape.

Prepare Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add baking soda (0.5 cups). Once boiling, carefully place each pretzel in the water for about 30 seconds, then remove and place on the prepared baking sheet.

Bake Pretzels
Bake the pretzels in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
