Method

Fries Preparation

    Cut and Soak Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) and place them in a bowl of cold water. Soak the potatoes for at least 30 minutes to remove excess starch.

    Dry and Fry Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. In a large pot, heat the vegetable oil to 350°F (175°C). Carefully add the dried potato strips in small batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

Truffle Oil Preparation

    Combine Oils

    In a small bowl, combine the olive oil and truffle oil. Mix well to create a truffle oil blend.

Topping the Fries

    Drizzle with Truffle Oil

    Once the fries are cooked and crispy, place them in a large serving bowl. Drizzle the truffle oil mixture over the fries, tossing gently to coat evenly.

    Add Cheese and Herbs

    Sprinkle the grated Parmesan cheese, chopped parsley, and chives over the fries. Toss lightly to distribute the toppings.

Roasted Garlic Aioli Preparation

    Roast Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for about 20-25 minutes until soft and fragrant. Allow to cool slightly, then squeeze the garlic out of the skins into a bowl.

    Make the Aioli

    In a mixing bowl, combine the roasted garlic, mayonnaise, lemon juice, and salt. Mix until smooth and well combined. Adjust seasoning to taste.
