Preparation of Sweet Potatoes

    Prepare the Sweet Potatoes

    Peel and chop the sweet potatoes into even chunks. Place them in a pot filled with salted water and bring to a boil.

    Cook the Sweet Potatoes

    Boil the sweet potatoes for 15-20 minutes or until tender. Drain and return to the pot.

    Mash the Sweet Potatoes

    Add a tablespoon of olive oil, salt, and black pepper to the sweet potatoes. Mash until smooth and creamy. Set aside.

Cooking the Vegetables

    Sauté the Onions

    Slice the onion thinly. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and cook until caramelized, about 10-15 minutes, stirring occasionally.

    Cook the Mushrooms

    Add sliced mushrooms to the skillet with the caramelized onions. Cook for another 5-7 minutes until the mushrooms are tender. Season with salt and pepper.

    Blanch the Haricots Verts

    In a separate pot, bring water to a boil and add the haricots verts. Blanch for 2-3 minutes until bright green and tender-crisp. Drain and toss with a drizzle of olive oil and a pinch of salt.

Cooking the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Sear the Salmon

    In the same skillet used for the vegetables, add another tablespoon of olive oil and heat over medium-high heat. Place the salmon fillets skin-side down and sear for 4-5 minutes, then flip and cook for an additional 3-4 minutes until cooked through.

Plating and Serving

    Plate the Dish

    On each plate, spoon a generous amount of mashed sweet potatoes. Top with the sautéed mushrooms and onions, followed by the seared salmon.

    Add the Finishing Touches

    Sprinkle the blanched haricots verts, dried cranberries, and toasted walnuts around the plate. Drizzle with white balsamic vinegar and truffle honey before serving.
