Preparation

    Prepare the Mussels

    Rinse the mussels under cold water, removing any beards and debris. Discard any mussels that are open and do not close when tapped.

    Chop the Vegetables

    Finely chop the onion and garlic. Slice the shiitake, cremini, and oyster mushrooms.

    Chop the Fresh Herbs

    Roughly chop the fresh herbs (thyme, parsley, or basil) and set aside.

Cooking

    Sauté the Vegetables

    In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then add the minced garlic and cook for an additional minute until fragrant.

    Add the Mushrooms

    Stir in the sliced shiitake, cremini, and oyster mushrooms. Cook for about 5-7 minutes, until the mushrooms are tender and have released their moisture.

    Deglaze with Madeira Wine

    Pour in the Madeira wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let cook for 2-3 minutes.

    Add the Mussels

    Add the cleaned mussels to the pot. Cover and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

    Finish with Cream and Herbs

    Reduce the heat to low and stir in the heavy cream and chopped fresh herbs. Season with salt and black pepper to taste. Cook for an additional 2 minutes to heat through.
