Grilled Pork Ribeye

    Prepare the Steaks

    Rub the pork ribeye steaks with olive oil, salt, black pepper, garlic powder, and fresh rosemary. Ensure they are evenly coated. Let them marinate for at least 30 minutes at room temperature.

    Grill the Steaks

    Preheat your grill to medium-high heat. Once hot, place the marinated steaks on the grill. Grill for 5-7 minutes on each side or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let rest for 5 minutes before serving.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot of salted water. Bring to a boil and cook for 15-20 minutes or until tender.

    Prepare the Garlic

    Meanwhile, in a small saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic cloves and sauté until fragrant, about 1-2 minutes. Remove from heat.

    Mash the Potatoes

    Once the potatoes are tender, drain them and return to the pot. Add the sautéed garlic, remaining butter, and heavy cream. Mash until smooth and creamy. Season with salt and black pepper to taste.

Asparagus

    Trim the tough ends off the asparagus spears. In a bowl, toss the asparagus with olive oil, salt, and black pepper.

    Roast the Asparagus

    Preheat your oven to 400°F (200°C). Spread the asparagus on a baking sheet and roast for 10-15 minutes until tender and slightly charred.

Maple-Bourbon Demi Glace

    Make the Demi Glace

    In a saucepan over medium heat, combine the chicken or beef stock, maple syrup, and bourbon. Bring to a simmer and reduce by half, about 15-20 minutes.

    Finish the Sauce

    Once reduced, remove from heat and stir in butter. Season with salt and black pepper to taste. Keep warm until ready to serve.
