Prepare the batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold beer or sparkling water, stirring until smooth and well combined.

Heat the oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Batter and fry the fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully lower the battered fish into the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Mix the coleslaw
In a large bowl, combine the shredded cabbage and carrot. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate for at least 30 minutes before serving.

Prepare the potatoes
Peel and cut the potatoes into fries. Soak them in water for at least 30 minutes to remove excess starch.

Combine the ingredients
In a small bowl, mix together the mayonnaise, dill pickles, capers, dill weed, and lemon juice. Stir until well combined and refrigerate until ready to serve.
