Method

Chips Preparation

  1. 1

    Heat the Oil

In a deep skillet or a fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 2

    Fry the Chips

Carefully add the potato chips in batches to the hot oil. Fry until they are golden brown and crispy, about 3-5 minutes.

  3. 3

    Drain and Season

Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain excess oil. Immediately sprinkle with salt while they are still hot.

Toppings Assembly

  1. 4

    Prepare the Toppings

In a mixing bowl, combine the queso blanco, crumbled blue cheese, chopped bacon, and chopped scallions. Stir gently to mix all the ingredients evenly.

  2. 5

    Assemble the Chips

On a large serving platter, arrange the hot, crispy potato chips. Spoon the cheese and bacon mixture generously over the top of the chips.

  3. 6

    Serve

Serve the dirty kettle chips immediately while they are warm, allowing everyone to enjoy the melty cheese and crispy toppings.
