Dough Preparation

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the egg and water.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a bowl, combine the shredded cheddar cheese, diced burnt end brisket sausage, and caramelized onions. Mix until well combined.

Assembling the Pierogies

    Roll Out the Dough

    After resting, roll out the dough on a floured surface to about 1/8 inch thickness.

    Cut and Fill

    Using a round cutter, cut the dough into circles. Place a tablespoon of the filling in the center of each circle, fold over, and pinch the edges to seal.

Cooking the Pierogies

    Boil the Pierogies

    Bring a large pot of salted water to a boil. Drop the pierogies in batches and cook until they float to the surface, about 3-5 minutes. Remove with a slotted spoon and drain.

    Pan-Fry (Optional)

    In a skillet, heat some oil over medium heat and pan-fry the boiled pierogies until golden brown on both sides.

Serving

    In a small bowl, mix the sour cream with horseradish and chopped chives.
