Preparation of Sweet Potato Fries

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes

    Peel the sweet potatoes and cut them into thin fries, approximately 1/4 inch thick.

    Season Fries

    In a large bowl, toss the sweet potato fries with olive oil, sea salt, paprika, cayenne pepper, and black pepper until well coated.

    Bake Fries

    Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and golden.

Preparation of Jerk Sauce

    Blend Ingredients

    In a blender or food processor, combine green onions, garlic, fresh thyme, allspice, cinnamon, brown sugar, soy sauce, lime juice, and scotch bonnet pepper. Blend until smooth.

    Pour the jerk sauce over the baked sweet potato fries during the last 5 minutes of baking, allowing the flavors to meld.

    In a blender, combine ripe avocado, smoked paprika, lime juice, Greek yogurt, salt, and smoked tomatoes. Blend until smooth and creamy.

Preparation of Mango Salsa

    Dice the ripe mango, red onion, and jalapeño finely. Chop the cilantro.
