Preparation of Ingredients

    Prepare the Burnt End Brisket

    If using pre-cooked burnt end brisket, skip to the next step. If preparing from scratch, smoke the brisket until tender, then cube into bite-sized pieces.

    Cook the Bratwurst

    Grill or pan-fry the bratwurst sausages over medium heat until they are browned and cooked through, about 10-12 minutes.

    Chop the Onion

    Dice the large onion into small pieces and set aside.

    Prepare the Brussels Sprouts

    Trim the ends off the Brussels sprouts and cut them in half.

    Peel and Cut Potatoes

    Peel the russet potatoes and cut them into quarters for boiling.

Cooking Process

    Cook the Potatoes

    In a large pot, add the quartered potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

    Sauté the Onion

    In a skillet, add a little oil and sauté the diced onion over medium heat until translucent, about 5 minutes. Set aside.

    Bacon-Braise the Brussels Sprouts

    In the same skillet, add the bacon slices and cook until crispy. Remove the bacon and crumble it. Add the halved Brussels sprouts to the skillet, cooking them in the bacon grease until tender and slightly caramelized, about 8-10 minutes. Stir in the crumbled bacon.

    Mash the Potatoes

    Once the potatoes are tender, drain them and return to the pot. Add butter, milk, cheddar cheese, salt, and pepper. Mash until smooth and creamy.

    Combine Ingredients

    On a large platter, arrange the cheddar mashed potatoes, top with the burnt end brisket, sliced bratwurst, and sautéed onions. Serve the bacon-braised Brussels sprouts on the side.

    Drizzle with Beerstard

    In a small bowl, mix beer with mustard to create the beerstard. Drizzle over the assembled plate before serving.
