Chili Preparation

Cook the Beef
In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

Sauté Vegetables
Add chopped onions and diced poblano peppers to the pot. Sauté until the vegetables are softened, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Tomatoes and Beans
Pour in the canned diced tomatoes (with juices), black beans (drained and rinsed), and chopped chipotle peppers. Stir to combine.

Season the Chili
Stir in the cumin, salt, and black pepper. Bring the mixture to a simmer.

Simmer
Reduce the heat to low and cover the pot. Let the chili simmer for at least 30 minutes, stirring occasionally.

Prepare Toppings
While the chili simmers, prepare your toppings by shredding the cheddar cheese, chopping the scallions, and getting the sour cream ready.

Ladle the chili into bowls and top with cheddar cheese, a dollop of sour cream, and a sprinkle of chopped scallions. Serve hot.
