Brisket Preparation

    Season the Brisket

    Rub the beef brisket with olive oil, salt, black pepper, smoked paprika, and garlic powder. Ensure an even coating.

    Cook the Brisket

    Place the brisket in a slow cooker or a large pot. Pour in the beef broth. Cover and cook on low for 8-10 hours, or until the brisket is tender and easily shredded.

    Caramelize the Onions

    Slice the yellow onions thinly. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onions and a pinch of salt, cooking slowly until they are golden brown and caramelized (about 20-30 minutes). Stir occasionally.

    Prepare the Aioli

    In a food processor, combine the mayonnaise, cherry peppers, garlic, lemon juice, and salt. Blend until smooth. Adjust seasoning if necessary.

    Assemble the Melt

    Shred the cooked brisket and mix it with the caramelized onions. On each pretzel bun, layer the brisket and onion mixture, top with chihuahua cheese, and add a generous dollop of cherry pepper aioli.

    Heat a pan or grill over medium heat. Place the assembled sandwiches on the grill and press down slightly. Grill for about 3-4 minutes on each side, or until the cheese is melted and the bun is crispy.
