Method

Directions

  1. 1

    Prepare the Beef Mixture

In a skillet over medium heat, sauté chopped onions and minced garlic until translucent. Add ground beef, cooking until browned. Drain excess fat, then stir in beef broth, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes until the mixture thickens.

  2. 2

    Make the Potato Chips

While the beef mixture simmers, wash and slice the Russet potatoes into thin rounds. Pat them dry with a paper towel. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato slices in batches until golden and crispy, about 3-4 minutes. Remove and drain on paper towels, then season with salt.

  3. 3

    Assemble the Nachos

Preheat your oven to 350°F (175°C). On a large baking sheet, layer the fried potato chips, then top with the beef mixture, diced green chiles, and shredded cheddar cheese.

  4. 4

    Bake

Place the baking sheet in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.

  5. 5

    Garnish and Serve

Remove from the oven and sprinkle sliced green onions over the top. Serve hot and enjoy your Two Fools Irish Nachos!
