Prepare the Chips
Wash and peel the potatoes, then slice them into thick chips.

Fry the Chips
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the chips in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Make the Batter
In a bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the ale until smooth.

Fry the Fish
Dip each piece of haddock into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown and cooked through, about 4-6 minutes. Remove and drain on paper towels.

Prepare the Coleslaw
In a large bowl, mix the shredded cabbage and grated carrot. In a separate bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Stir the dressing into the cabbage mixture until well coated.

Serve
Plate the fried fish alongside the chips and coleslaw. Serve with tartar sauce on the side.
