    Prepare the Roast Beef

    If you haven't already, roast a beef of your choice until medium rare, then thinly slice it against the grain.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the sliced onions and mushrooms, season with salt and pepper, and sauté until the onions are caramelized and the mushrooms are tender, about 10-12 minutes.

    Prepare the Au Jus

    In a small saucepan, heat the beef broth over medium heat until warm. Set aside.

    Assemble the Sandwich

    Slice the French baguette in half lengthwise. Layer the thinly sliced roast beef on the bottom half, top with the sautéed onions and mushrooms, and then sprinkle the Irish white cheddar cheese on top.

    Melt the Cheese

    Place the assembled sandwich under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, slice the sandwich in half, and serve hot with a side of warm Au Jus for dipping.
