Prepare the Pastrami
In a bowl, mix black pepper, coriander seeds, paprika, garlic powder, onion powder, sugar, and Cure #1. Rub this mixture all over the beef brisket. Wrap the brisket in plastic wrap and refrigerate for 5-7 days, turning it every couple of days.

Cook the Pastrami
After curing, rinse the brisket and pat it dry. Preheat your smoker or oven to 225°F (107°C). Smoke the brisket for about 6-8 hours or until it reaches an internal temperature of 190°F (88°C). Allow it to rest before slicing.

Assemble the Sandwich
On a slice of rye bread, layer slices of pastrami and Swiss cheese. Add a layer of mustard if desired. Top with another slice of rye bread and repeat for additional sandwiches.

Serve
Cut the sandwiches in half and serve with pickles or coleslaw on the side.
