Cooking Instructions for Liffey Chips
- 1
Prepare the Fish
Cut the fish fillets into bite-sized pieces and pat them dry with paper towels.
- 2
Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.
- 3
Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
- 4
Fry the Fish
Dip each piece of fish into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil and fry in batches until golden and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.
