    Sear the Beef

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef sirloin chunks and sear until browned on all sides. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, diced carrots, celery, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Combine Ingredients

    Return the seared beef to the pot. Pour in the Guinness and beef stock. Add the diced potatoes, bay leaves, thyme, salt, and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors are well blended.

    Finish and Serve

    Remove the bay leaves. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley, alongside house-made brown bread.
