    Prepare the Ingredients

    Cut the beef sirloin into 1-inch cubes, slice the carrots, dice the celery, and cube the potatoes. Chop the onion and mince the garlic.

    Brown the Beef

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides for about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables

    In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.

    Combine and Simmer

    Return the browned beef to the pot. Add the Guinness beer, beef stock, thyme, and bay leaves. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 1.5 to 2 hours, stirring occasionally.

    Add Potatoes

    After the stew has simmered for 1.5 to 2 hours, add the potatoes to the pot. Continue to simmer for an additional 30 minutes or until the potatoes are tender.

    Final Seasoning

    Taste and adjust the seasoning with additional salt and pepper as needed. Remove bay leaves before serving.
