Pour in the Guinness stout and beef broth. Stir in thyme, black pepper, and bring to a boil.

Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours until beef is tender.

Prepare the Boxty
Peel and grate the potatoes. Squeeze out excess moisture and combine with flour, baking powder, salt, milk, and egg in a bowl.

Heat a non-stick skillet over medium heat and add a bit of oil. Pour in a ladle of the potato mixture and spread it out to form a pancake.

Cook for about 3-4 minutes on each side until golden brown. Repeat with the remaining mixture.

Assemble the Dish
Once the beef stew is ready, place a scoop of it on one potato pancake and top with another pancake. Serve hot.
