Salmon Preparation

Cure the Salmon
In a bowl, mix together the Irish whiskey, brown sugar, kosher salt, and chopped dill. Place the salmon fillet in a shallow dish and cover it with the curing mixture. Cover and refrigerate for 24-48 hours.

Blue Cheese Spread Preparation

Prepare the Spread
In a mixing bowl, blend softened cream cheese, crumbled blue cheese, garlic powder, and chopped chives until smooth. Set aside.
Irish Brown Bread Preparation

Bake the Bread
Preheat the oven to 425°F (220°C). In a mixing bowl, combine whole wheat flour, baking soda, and salt. Gradually stir in the buttermilk until a soft dough forms. Turn onto a floured surface, knead gently, shape into a round loaf, and place on a baking sheet. Bake for 30 minutes or until golden brown.

Assemble the Plate
Slice the cured salmon and serve it on a plate with lettuce leaves, cucumber & caper relish, blue cheese spread, and slices of Irish brown bread on the side.
