Cheesecake Preparation

    Prepare the Crust

    Preheat the oven to 325°F (160°C). In a bowl, mix together graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

    Make the Filling

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the Bailey's Irish Cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just combined after each addition.

    Combine and Bake

    Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for an hour.

    Chill

    Remove the cheesecake from the oven and allow it to cool to room temperature. Cover and refrigerate for at least 4 hours or overnight for best results.

    Prepare the Whipped Topping

    In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add in more Bailey's Irish Cream, to taste, and continue whipping until stiff peaks form.

    Serve

    Slice the chilled cheesecake and serve with a generous dollop of the whipped Irish cream topping.
