Make the Pie Crust
In a large bowl, combine flour, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Divide dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling
In a large bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, and salt. Let the mixture sit for about 15 minutes.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disk of dough on a floured surface to fit your pie pan. Place the rolled dough in the pan, fill with the apple mixture, and roll out the second disk to cover the pie. Seal the edges and cut slits in the top crust to allow steam to escape.

Bake the Pie
Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes, or until the apples are tender and the crust is golden brown.

Serve
Allow the pie to cool for at least 30 minutes before slicing. Serve with whipped cream on the side.
