Greens
Wash all the greens thoroughly to remove grit. Roughly chop the mustard greens and fenugreek (if using). Keep spinach leaves whole or coarsely chop if very large.
Bring a large pot of water to a boil. Add a pinch of salt and blanch the greens in two batches for 2 minutes each, just until wilted and bright green. Immediately transfer to an ice bath to stop cooking and preserve color.
Drain well and squeeze out excess water from each batch using clean hands or a towel. Reserve the blanching liquid if desired for thinning.
Using a blender or food processor, blend the drained greens in batches into a coarse-smooth puree. Add 2–3 tablespoons of water (or reserved blanching liquid) if needed to help the blender. Aim for a texture that is mostly smooth with a little texture, not paper-thin.
Aromatics & Base
Add cumin seeds and let them sizzle for 20–30 seconds until fragrant and lightly browned.
If using the chopped tomato, add it now and cook 3–4 minutes until it breaks down and integrates with the aromatics.

Add ground coriander, ground cumin, turmeric, and black pepper. Stir for 30–60 seconds to cook the raw spice flavor.
Add the pureed greens to the pan and stir to combine with the spiced base. If the mixture feels too thick, add up to 1/2 cup more water or reserved blanching liquid to reach a creamy consistency that will still hold on a spoon.
Season with salt and stir in kasuri methi (if using) by rubbing it between your palms to release aroma.
Simmer gently, uncovered, over low heat for 10–12 minutes, stirring occasionally to prevent sticking. This melds flavors and reduces excess water.
Stir in garam masala and taste; adjust salt, heat, or spice levels as needed.
Finishing & Serve
Lower heat to very low and stir in the cream or yogurt slowly to avoid curdling. Cook 1–2 minutes until fully incorporated and heated through—do not boil aggressively after dairy is added.
Swirl in the butter if using and add lemon juice. Give the saag a final taste and adjust seasoning: more lemon for brightness, more salt for depth, or a pinch more garam masala for warmth.
Transfer to a serving bowl. Optionally garnish with a small drizzle of ghee or cream and a sprinkle of crushed kasuri methi or a few whole buttered cubes (paneer) on top.
Serve hot with makki ki roti, naan, rice, or bread.
