Prepare greens
If using field greens: wash and spin dry 3 cups mixed greens. Dress lightly with a squeeze of lime and a pinch of salt just before assembling to prevent wilting.
Rajma (kidney beans) in tangy tomato sauce
Soak and cook beans (if using dried)
If using dried rajma: rinse 2 cups beans and soak in cold water to cover by 2 inches for 8 hours or overnight. Drain, place in a pot with 4–6 cups fresh water, bring to a boil, skim foam, then simmer 60–90 minutes until tender. Alternatively, pressure cook 20–25 minutes. Reserve cooking liquid. If using canned beans, drain and rinse; measure 2 cups and skip to the next step.
Prepare spice base
Heat 2 tbs oil or ghee in a wide skillet over medium heat. Add 1 tsp cumin seeds and let sizzle 20–30 seconds. Add 1 cup finely chopped onion and sauté 6–8 minutes until softened and beginning to brown. Add 4 minced garlic cloves and 1 tbs grated ginger; cook 1 minute until fragrant.
Build the tomato sauce
Add 2 cups chopped tomatoes (or canned crushed tomatoes) and 2 tsp tomato paste to the skillet. Cook 6–8 minutes, stirring occasionally, until tomatoes break down and oil separates slightly. Stir in 1 tsp turmeric, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp garam masala and 1 tsp red chili powder. Cook 1–2 minutes to toast spices.
Combine beans and simmer
Add the cooked or canned beans to the tomato sauce along with about 1 cup reserved bean cooking liquid or water to reach a saucy consistency. Stir gently to combine and simmer uncovered 10–15 minutes so flavors meld and sauce thickens. Taste and adjust salt (start with 2 tsp), and add 1 tsp amchur or 1 tsp lemon juice for tang. If sauce is too thick, add more cooking liquid or water, 2–4 tbs at a time.
Finish
Stir in 0.25 cup chopped fresh cilantro and 1 tsp garam masala (if you prefer more aroma). Simmer 1 minute, then remove from heat. Keep warm until assembly.
Toppings (choose any)
Prepare toppings: thinly slice 0.5 cup red onion; dice 0.5 cup cucumber and 0.5 cup tomato. If using yogurt, whisk until smooth. Crumble 0.5 cup feta or paneer if desired. Chop 0.25 cup roasted nuts. Arrange toppings in small bowls for assembly.
Chutneys & finishes
Warm 0.25 cup mint-coriander chutney briefly if desired; stir tamarind-date chutney to a smooth consistency. Keep lime wedges nearby. Have red chili flakes or black pepper ready to sprinkle.
Assembly
Top each bowl with your choice of sliced onion, diced cucumber, tomato, a dollop of yogurt, crumbled feta or paneer, and chopped roasted nuts. Drizzle 1–2 tbs mint-coriander chutney and 1 tbs tamarind chutney over each if using. Squeeze lime and finish with a pinch of red chili flakes or black pepper.
Serve warm. Leftover rajma refrigerates up to 4 days; flavors deepen with time.
