Prepare aromatics

Crush cardamom seeds using the back of a spoon or mortar and pestle. If using saffron, lightly crush the threads and set both aside.

Simmer milk

In a heavy-bottomed saucepan, add 4 cups whole milk and 1 tablespoon unsalted butter. Bring to a gentle simmer over medium-low heat, stirring occasionally to prevent scorching.

Reduce and thicken

Reduce heat to low. Continue to simmer the milk gently, stirring frequently and scraping the bottom, until the volume reduces by about one quarter and milk becomes slightly thickened and creamy, about 25–30 minutes. Watch carefully so it doesn't burn.

Add flavorings & sweeteners

Add crushed cardamom, saffron (if using), 1/4 cup granulated sugar, 1 cup sweetened condensed milk and 1/2 cup evaporated milk to the reduced milk. Stir continuously over low heat for another 5–7 minutes until sugar dissolves and mixture is homogeneous. Taste and adjust sweetness if needed.

Cool the base

Remove from heat and let the milk mixture cool for 10–15 minutes at room temperature. If you see any lumps from thickening, strain the mixture through a fine-mesh sieve into a clean bowl to ensure a smooth kulfi texture.

Mango Puree & Mix-ins

Prepare mango puree

If using fresh mangoes, peel and cube ripe mangoes and purée in a blender until smooth. Measure 2 cups mango puree. Stir 1 teaspoon lemon or lime juice into the puree to brighten the flavor and prevent browning.

Combine mango with milk base

Allow the milk mixture to cool to just warm (not hot). Stir 2 cups mango puree into the cooled milk base until fully combined and color is even. Taste and adjust acidity/sweetness with a little more lemon juice or sugar if desired.

Add nuts (optional)

Fold in half of the chopped pistachios and almonds (about 2 tablespoons of each) into the mango-kulfi mixture for texture. Reserve remaining nuts for garnish or layering.

Finish & Setting

Sweetness and salt finish

Stir in a pinch of salt to balance flavors. Let the combined mixture cool completely to room temperature, then chill in the refrigerator for at least 2 hours (preferably 4 hours) so it thickens and develops flavor.

Pour into molds

Once chilled, give the mixture a final stir. Pour into kulfi molds or small disposable cups, filling nearly to the top. If you like layered or swirled appearance, spoon a tablespoon of plain mango puree or leftover milk base in the middle as you fill. Sprinkle remaining chopped nuts into each mold or over the top.

Insert sticks and freeze

If using cups, insert wooden sticks when mixture is partially frozen (about 1 hour) so they stand upright; with molds that have lids, follow the mold instructions. Freeze the filled molds solid for at least 8 hours or overnight for best texture.

Unmold and serve

To unmold, dip the molds briefly (5–10 seconds) in warm water to loosen the kulfi, then gently pull out. If using cups, peel away the cup. Serve immediately garnished with a few chopped pistachios/almonds and a pinch of saffron threads if desired.
