Prepare spices
Lightly crush the cardamom pods and peppercorns using the flat side of a knife or mortar and pestle. Leave the cloves and cinnamon stick whole. Thinly slice the fresh ginger.
Simmer to extract flavor
Once boiling, reduce heat to medium-low and simmer uncovered for 8 minutes to allow the spices to infuse the water. Watch carefully to avoid scorching.
Sweeten and finish
Stir in 3 tablespoons sugar, tasting after a minute and adjusting sweetness as desired. Simmer everything together for 2–3 minutes to marry flavors and for the tea to steep to a robust strength.
Strain
Remove the saucepan from heat. Using a fine-mesh sieve or cheesecloth, strain the hot beverage into a serving pot or directly into mugs to remove tea leaves and whole spices.
Optional honey finish
If using, stir 1 teaspoon honey into the strained hot beverage while still hot to add a rounded sweetness and glossy finish.
Garnish & Serving
Pour about 1/4 cup additional hot milk into each mug (or steam/froth if available) then ladle the spiced hot beverage over the milk, filling each cup to the top. Dust lightly with ground cinnamon or grated nutmeg. Serve immediately while hot.
Makes approximately 3–4 servings depending on cup size. Leftovers can be reheated gently over low heat, stirring to recombine.
