Beef kabob patties
Make the spiced beef mix
In a large bowl, combine the ground beef, plain yogurt, minced garlic, grated ginger, ground cumin, ground coriander, paprika, turmeric, garam masala, red chili powder, kosher salt, black pepper, chopped cilantro, and chopped green onion. Use your hands or a spatula to mix gently until ingredients are evenly distributed—avoid overworking to keep patties tender.
Form patties
Divide the mixture into 2 equal portions (about 8 ounces each). Lightly wet your palms and form each portion into a slightly elongated kabob-style patty about 3.5–4 inches long and 3/4–1 inch thick, pressing a shallow indentation across the center so the patty cooks evenly.
Chill briefly
Place formed patties on a plate, cover, and refrigerate for 15–30 minutes to let flavors meld and firm up for easier handling.
Cook the patties
Heat a large skillet or grill pan over medium-high heat and add 1 tablespoon vegetable oil. When shimmering, add patties without crowding. Cook 3–4 minutes per side for medium (internal temperature about 155°F/68°C), or adjust time to desired doneness. If using cheese, place a slice on each patty during the last 30–60 seconds and cover the pan to melt. Remove patties and rest 3–4 minutes.
Tzatziki-mint raita (cool sauce)
While patties chill or cook, make the raita. In a small bowl combine 1/2 cup plain yogurt, the squeezed grated cucumber, chopped mint, lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Stir until smooth. Taste and adjust seasoning with a pinch more salt or lemon if needed. Keep chilled until assembly.
Pickled onions
Place the thinly sliced red onion in a small jar or bowl. In a separate cup mix 2 tablespoons white vinegar, 2 tablespoons water, 1/2 teaspoon sugar, and 1/8 teaspoon salt until dissolved. Pour the vinegar mixture over the onions and let sit at room temperature at least 10 minutes (longer for more tang). If prepping ahead, refrigerate for up to 1 week.
Assembly & buns
Place a lettuce leaf on the bottom bun, then one beef kabob patty. Spoon 1–2 tablespoons tzatziki-mint raita over the patty, top with 1–2 tablespoons pickled onions and a slice of tomato. Add the top bun and press lightly. Serve immediately with extra raita on the side.
