Marinate chicken
Place trimmed, pounded chicken thighs in a shallow bowl or zip-top bag. Combine buttermilk and hot sauce, pour over chicken to coat. Refrigerate and marinate at least 1 hour (preferably 4 hours or overnight) to tenderize and flavor.
Prepare breading
In a wide shallow bowl, whisk together all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and black pepper until evenly distributed.
Dredge chicken
Remove a piece of marinated chicken, let excess buttermilk drip off, then press into the seasoned flour mixture to fully coat. For extra crispness, double-dredge: after first coat, dip briefly back in remaining buttermilk, then press again into flour. Place breaded pieces on a wire rack while heating oil.
Fry chicken
Heat vegetable oil in a deep skillet or Dutch oven to 350°F (175°C) or until a small piece of bread sizzles and browns in ~30 seconds. Fry breaded chicken in batches (do not overcrowd) for 5–7 minutes per side, turning once, until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a baking sheet and keep warm in a 200°F (95°C) oven while finishing remaining pieces.

Assemble burgers
On each bottom bun place a lettuce leaf, a fried chicken thigh, about 1–2 tablespoons of mango chutney (thin with yogurt if too thick), a generous spoonful (≈2 tbs) of coleslaw, a spoonful of kachumber (≈1–2 tbs), and a drizzle of habanero garlic aioli. Cap with toasted top bun and serve immediately.

Coleslaw
In a medium bowl, combine shredded cabbage and carrot. In a small bowl whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth. Pour dressing over cabbage-carrot mix and toss to coat. Refrigerate until ready to use (at least 10 minutes).
Chutney & Habanero Garlic Aioli
Prepare chutney
If mango chutney is very thick, stir in 1 tablespoon plain yogurt to reach a spoonable consistency. Reserve in a small bowl for assembly.
Make habanero garlic aioli
In a small bowl mix mayonnaise, minced habanero (start with half and add more to taste), minced garlic, lime juice, salt, and honey. Taste and adjust heat/sweetness. If too spicy, thin with a teaspoon of yogurt or more lime juice. Chill briefly if time allows to let flavors meld.
