Potato Patties (Aloo Tikki)

Boil potatoes

Place diced potatoes in a pot and cover with cold water. Add a pinch of salt. Bring to a boil, then simmer until potatoes are fork-tender, about 12–15 minutes. Drain thoroughly and return to the still-warm pot to dry for 2–3 minutes.

Mash and prep mix

Mash potatoes until smooth with no large lumps. Add the finely chopped onion, green chilies, grated ginger, minced garlic, green peas (if using), chopped cilantro, ground cumin, ground coriander, red chili powder, garam masala, amchur (or lemon juice), and salt. Mix thoroughly to distribute spices.

Bind and shape

Stir in cornstarch (or flour) and 30 g of the bread crumbs to help bind. If the mixture is too wet, add more bread crumbs 1 tbsp at a time until it holds together. Divide the mixture into 8 equal portions for 4 burgers (2 patties per burger). Shape each portion into a tight ball, then flatten into 3–3.5 inch (7–9 cm) patties about 1/2 inch thick.

Coat

Lightly press each patty into remaining bread crumbs to coat the outsides. This gives a crisp exterior when pan-fried.

Pan-fry

Heat vegetable oil in a large skillet over medium heat. When hot, add patties (do not overcrowd) and fry 3–4 minutes per side until golden brown and crisp. Reduce heat slightly if browning too quickly to ensure cooked through. Transfer to a wire rack or paper towel-lined plate to drain. Repeat with remaining patties, adding more oil if needed.

Kachumber

If making kachumber fresh: combine diced tomato, cucumber, and red onion in a bowl. Add chopped cilantro, lemon juice, salt, and black pepper. Toss gently and let sit 5–10 minutes to meld flavors. Adjust seasoning to taste.

Buns & Assembly

Toast buns

Slice pretzel buns in half. Spread a little softened butter on cut sides and toast cut-side down in a dry skillet over medium heat until golden and crisp, about 1–2 minutes.

Choose sauces

Decide which specialty sauce(s) to use: tamarind chutney for sweet-tangy, mint-coriander chutney for herbaceous heat, or spicy yogurt for cooling spice. Warm or bring sauces to room temperature.

Assemble burgers

On the bottom half of each toasted pretzel bun, place a lettuce leaf. Put one warm aloo-tikki patty on the lettuce, spread a teaspoon of your chosen specialty sauce on the patty, then add the second patty and a generous spoonful of kachumber on top or alongside the patties. Drizzle additional chutney (tamarind or mint) on top of kachumber as desired. Finish with more sauce on the top bun and place it over the stack.

Serve

Serve each Aloo-Tikki burger immediately with extra chutneys on the side for dipping. Optional: serve with fries or a small salad.

Sauces & Chutney (if making quick spicy yogurt)

Quick spicy yogurt: whisk 120 ml plain yogurt with 1/2 tsp chili powder (adjust), 1/2 tsp roasted cumin powder, 1/2 tsp lemon juice and salt to taste. Chill briefly. Use alongside chutneys as desired.
