Ice Cream Base
Corn Macarons
Method
Ice Cream
Prepare the Ice Cream Base
In a mixing bowl, combine heavy cream, whole milk, granulated sugar, vanilla extract, peach puree, and a pinch of salt. Whisk until the mixture is smooth and the sugar is dissolved.
Chill the Mixture
Cover the bowl and place it in the refrigerator for at least 2 hours to chill.
Churn the Ice Cream
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Freeze
Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
Corn Macarons
Make the Macaron Batter
In a bowl, sift together almond flour, powdered sugar, and cornmeal. In a separate bowl, whip egg whites until frothy, then gradually add granulated sugar and continue whisking until stiff peaks form. Gently fold the dry ingredients into the meringue, adding food coloring until desired color is achieved.
Pipe the Macarons
Transfer the batter to a piping bag and pipe small circles onto a parchment-lined baking sheet. Tap the sheet on the counter to remove air bubbles.
Rest and Bake
Let the piped macarons rest for 30-60 minutes until a skin forms. Preheat the oven to 300°F (150°C) and bake for 15-20 minutes. Let cool completely before removing from the sheet.
