Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead Dough
Mix until a dough forms, then transfer to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Pitas
Punch down the risen dough and divide it into 2 equal pieces. Roll each piece into a ball, then flatten into discs about 1/2 inch thick.

Second Rise
Cover the discs with a cloth and let them rest for another 30 minutes.

Preheat Oven
Preheat your oven to 475°F (245°C) and place a baking stone or inverted baking sheet in the oven to heat up.

Transfer the dough discs onto the hot stone/sheet and bake for about 5-7 minutes, or until they puff up and are lightly golden.
