Prepare your charcoal grill by lighting the charcoal and allowing it to burn until it is covered with white ash, indicating that it is at a high heat.
3. Grill the Lamb
Place the marinated lamb racks on the grill. Cook for about 6-8 minutes on each side for medium-rare, or longer if you prefer them more done. Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C) for medium-rare.
4. Rest and Serve
Once grilled to your desired doneness, remove the lamb racks from the grill and let them rest for about 5 minutes. Slice between the bones and serve with your choice of sides.
