Köfte (Turkish Meatballs)
Make the köfte mix
In a large bowl, combine ground beef and ground lamb. Add the grated onion, minced garlic, chopped parsley, breadcrumbs, egg, Turkish seasoning blend, dried oregano, salt, and pepper. Mix thoroughly but gently with your hands until evenly combined; do not overwork the meat (about 1–2 minutes). Cover and refrigerate for at least 30 minutes to let flavors meld and to firm up the mixture.
Shape and cook
Divide the meat mixture into 5 equal portions. Shape each portion into a large oblong meatball about 3–4 inches long and 1.5–2 inches thick, compressing gently so they hold together. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When hot, add köfte in a single layer (work in batches if necessary). Sear 3–4 minutes per side until a deep brown crust forms. Reduce heat to medium-low, cover, and cook an additional 4–6 minutes, turning once, until internal temperature reaches 71°C (160°F). Transfer cooked köfte to a warm plate and tent with foil while finishing remaining batches.
Rice Pilaf
Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.
Pour in 3.5 cups chicken or vegetable stock, add 1 teaspoon salt and 1/2 teaspoon black pepper. Bring to a gentle boil, then reduce heat to low, cover tightly, and simmer for 15–18 minutes without lifting the lid. Remove from heat and let rest, covered, 10 minutes. Fluff with a fork just before serving.
Turkish Butter Sauce (Tereyağlı Sos)
In a small skillet or saucepan, melt 4 tablespoons unsalted butter over low heat until fully melted and slightly fragrant but not browned (about 1–2 minutes). Remove from heat and stir in 1 teaspoon sweet paprika and 1/2 teaspoon dried mint; the residual heat will bloom the spices. Add 1 tablespoon lemon juice and 1/4 teaspoon salt, taste and adjust seasoning. Keep warm until plating.
Sides & Plating
Prepare salad: combine mixed salad vegetables in a bowl, dress lightly with 1 tablespoon olive oil and a pinch of salt and pepper, toss gently.
To assemble each plate: Spoon a generous mound of rice (about 1 cup) onto the center or side of the plate. Place 5 large köfte on top or beside the rice (if serving one plate for the dish, arrange all 5). Drizzle the warm Turkish butter sauce over the köfte and rice (about 2–3 tablespoons over the meat and rice). Garnish with chopped parsley and a lemon wedge on the side.
