Prepare and marinate chicken

Trim excess fat from the chicken thighs and cut into 1/2- to 3/4-inch strips (chunky slices). In a large bowl combine Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, smoked paprika, allspice, salt, black pepper, and red pepper flakes. Add the chicken strips and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor and tenderization.

Stacking alternative (if replicating rotisserie)

If you want a vertical-roasted texture, tightly stack the marinated strips on a long skewer and press together. Roast on a rack at 200°C/400°F for 25–30 minutes, turning once, until internal temperature reaches 74°C/165°F. Otherwise proceed to pan-cook for a crisp finish as below.

Rice

Rinse the Basmati rice under cold water until the runoff is clear to remove excess starch. In a medium saucepan bring 2.5 cups water, 0.5 tsp salt, and 1 tbsp butter or oil to a boil. Add the rinsed rice, stir once, reduce heat to low, cover and simmer for 12–15 minutes until water is absorbed and rice is tender. Remove from heat and let rest covered for 5 minutes, then fluff with a fork.

Cooking the Chicken (Pan-Fry Finish)

Heat a large heavy skillet or cast-iron pan over medium-high heat. Add 2–3 tablespoons neutral oil and let it shimmer but not smoke. Remove marinated chicken from the fridge and let any excess marinade drip off (do not overload the pan). Add chicken in a single layer, working in batches if necessary, and sear without moving for 2–3 minutes to develop color. Stir/flip and continue to cook another 3–4 minutes until chicken pieces are browned and cooked through (internal temperature 74°C/165°F). The yogurt in the marinade will caramelize slightly — scrape any fond to incorporate flavor.

If using stacked/oven method, after roasting you can finish 1–2 minutes per side in a hot pan with 1 tablespoon oil to get crisp edges and color. Transfer cooked chicken to a resting plate for 5 minutes, then slice or chop into chunky pieces if needed.

Salad

Combine chopped romaine, halved cherry tomatoes, diced cucumber, sliced red onion, and chopped parsley in a bowl. Toss with 3 tablespoons lemon vinaigrette (or olive oil + lemon juice), and season with salt and pepper to taste. Keep refrigerated until plating.

Bread

Warm the flatbreads or pitas: brush each with a little butter or olive oil and heat in a dry skillet over medium heat 30–45 seconds per side until warm and slightly charred, or wrap in foil and heat in a 180°C/350°F oven for 5–7 minutes. Keep covered to stay soft.

Sauces

Garlic yogurt sauce

Whisk together 3/4 cup Greek yogurt, 1/4 cup mayonnaise, 2 tsp minced garlic, 1 tsp lemon juice and 1/4 tsp salt until smooth. Taste and adjust acidity or salt. Chill until serving.

White donair-style sweet sauce (optional)

Whisk 1/4 cup sweetened condensed milk with 2 tsp white vinegar and 1 tsp sugar until fully combined and slightly thickened. Chill before serving.

Finish & Plating

To assemble each Chicken Donair Plate (serves 4): Divide warm Basmati rice among 4 plates (about 1/2 cup cooked rice per plate if following recipe — adjust if you prefer more). Arrange a generous portion of the sliced/fried chicken (about 300 g raw chicken yield per plate) on top or beside the rice. Add a scoop of the tossed salad and 1 warmed flatbread per plate. Drizzle the garlic yogurt sauce (or donair sweet sauce) over the chicken or serve on the side. Garnish with chopped parsley and lemon wedges. Serve immediately so chicken is hot and bread is soft.

Optional: For restaurant-style presentation, stack sliced chicken slightly upright, sprinkle extra smoked paprika or sumac, and serve extra sauce in a small ramekin.
