Method

Turkey

  1. 1

    Prepare the Turkey

Preheat your oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry with paper towels.

  2. 2

    Season the Turkey

Rub the softened butter all over the turkey, including under the skin. Season generously with salt, black pepper, garlic powder, onion powder, and chopped fresh herbs.

  3. 3

    Roast the Turkey

Place the turkey on a roasting rack in a roasting pan. Roast in the preheated oven for about 13 minutes per pound, or until the internal temperature reaches 165°F (75°C). Baste the turkey every 30 minutes with pan juices.

  4. 4

    Rest the Turkey

Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.

Stuffing

  1. 5

    Prepare the Stuffing Mixture

In a skillet, melt 4 tablespoons of butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes.

  2. 6

    Combine Ingredients

In a large bowl, combine the sautéed vegetables, bread cubes, dried cranberries, sage, thyme, salt, and pepper. Mix well.

  3. 7

    Moisten the Stuffing

Pour in the chicken broth and beaten egg, mixing until the bread is moist but not soggy.

  4. 8

    Bake the Stuffing

Transfer the stuffing to a buttered baking dish and bake at 350°F (175°C) for about 30-40 minutes until golden brown.

Gravy

  1. 9

    Make the Gravy

Once the turkey is removed from the roasting pan, pour the turkey drippings into a saucepan. Add the all-purpose flour and whisk until smooth.

  2. 10

    Add Broth

Gradually add chicken broth while whisking to avoid lumps. Cook over medium heat until thickened, about 5-10 minutes.

  3. 11

    Season the Gravy

Season with salt and black pepper to taste. Keep warm until ready to serve.

Sides

  1. 12

    Prepare the Green Beans

In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until bright green and tender-crisp. Drain and set aside.

  2. 13

    Sauté the Green Beans

In the same pot, melt butter over medium heat, add minced garlic, and sauté briefly. Add the green beans and toss to coat. Season with salt and pepper.

  3. 14

    Prepare the Mashed Potatoes

In a large pot, boil peeled and cubed potatoes until tender. Drain and return to the pot. Add milk, butter, salt, and pepper, and mash until smooth and creamy.

Dessert

  1. 15

    Serve the Pumpkin Pie

Slice the pumpkin pie and serve with a dollop of whipped cream on top.
