    Wash and Cut Potatoes

    Thoroughly wash the russet potatoes under cold water to remove dirt. Cut each potato into even wedges, around 1 inch thick, to ensure even cooking.

    Soak Potatoes

    Place the cut potato wedges in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

    Heat the Oil

    In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Dry Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes (First Fry)

    Carefully add a batch of potato wedges to the hot oil. Fry them for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

    Cool and Repeat

    Let the first batch cool for 10 minutes. Repeat the frying process for the remaining batches.

    Once all batches have been cooled, return them to the hot oil in batches for the second fry. Fry for an additional 3-4 minutes until golden brown and crispy. Remove and drain on paper towels.

Seasoning

    Immediately after frying, sprinkle the hot fries with salt, black pepper, paprika, garlic powder, and onion powder. Toss gently to coat evenly.
