Method

Fish Preparation

  1. 1

    Season the Fish

Rinse the perch fillets under cold water and pat dry with paper towels. Sprinkle salt and black pepper evenly over both sides of the fillets. Drizzle lemon juice over the fillets and let them marinate for about 15 minutes.

Breading

  1. 2

    Prepare the Breading Station

Set up a breading station with three shallow dishes. In the first dish, add the all-purpose flour. In the second dish, beat the eggs until well mixed. In the third dish, combine breadcrumbs and Parmesan cheese.

  2. 3

    Bread the Fish

Take each marinated perch fillet, first dredge it in the flour, shaking off excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the fillet in the breadcrumb and Parmesan mixture, pressing lightly to adhere.

Cooking

  1. 4

    Cook the Fish

In a large skillet, heat olive oil over medium heat. Once hot, add the breaded perch fillets in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate.

  2. 5

    Garnish and Serve

Chop fresh parsley and sprinkle over the cooked fish for garnish. Serve hot with lemon wedges on the side.
