Method
Preparing the Strawberries

Mix Strawberries
In a large bowl, combine the sliced strawberries with granulated sugar and lemon juice. Gently toss to coat the strawberries and set aside for at least 30 minutes to allow the juices to form.
Making the Shortcakes

Preheat Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Cut in Butter
Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Wet Ingredients
Stir in the whole milk and vanilla extract until just combined. Do not overmix.

Shape and Bake
Turn the dough out onto a floured surface and gently pat into a 1-inch thick round. Cut into rounds using a biscuit cutter or a glass. Place on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

Whip Cream
In a mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.
Assembling the Shortcake

Layer the Ingredients
Split the shortcakes in half horizontally. Spoon a generous amount of the macerated strawberries onto the bottom half of each shortcake, followed by a dollop of whipped cream. Place the top half of the shortcake back on.
