Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade and coat them thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

Cooking the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes on each side or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and cut the asparagus into 2-inch pieces, slice the bell peppers, and cut the zucchini into half-moon shapes.

  2. 5

    Sauté the Vegetables

In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the asparagus, bell peppers, and zucchini. Season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.

Serving

  1. 6

    Plate the Dish

Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes. Serve the grilled salmon alongside the sautéed vegetables on a plate. Optionally, garnish with fresh lemon slices.
