For the Calamari

Method

Preparing the Marinara Sauce

  1. 1

    Cook the Garlic

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  2. 2

    Add Tomatoes and Seasonings

Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

  3. 3

    Simmer the Sauce

Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally. If using, stir in fresh basil just before serving.

Preparing the Calamari

  1. 4

    Prepare the Breading Station

Set up a breading station with three bowls: one for flour mixed with salt, pepper, and garlic powder; one for beaten eggs; and one for breadcrumbs.

  2. 5

    Bread the Calamari

Dredge each calamari ring in the flour mixture, then dip it into the beaten eggs, and finally coat it with breadcrumbs.

  3. 6

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can check the temperature with a kitchen thermometer.

  4. 7

    Fry the Calamari

Carefully add the breaded calamari in batches to the hot oil. Fry for about 2-3 minutes or until they turn golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  5. 8

    Serve with Marinara Sauce

Serve the fried calamari hot with the marinara sauce on the side for dipping.
