Method
Make the Pie Crust

Prepare the Dough
In a large mixing bowl, combine 2.5 cups of all-purpose flour, 1 cup of unsalted butter (cut into small cubes), 0.5 tablespoons of granulated sugar, and 0.5 teaspoons of salt. Mix together using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add 6 tablespoons of ice water to the mixture, one tablespoon at a time, mixing gently until the dough comes together. Do not overmix.

Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling

Prepare the Fruit
Wash and slice the fresh fruit into bite-sized pieces. If using apples, peel and core them first.

Mix the Filling
In a large bowl, combine the sliced fruit with 0.75 cups of granulated sugar, 2 tablespoons of cornstarch, 1 teaspoon of cinnamon, and 1 tablespoon of lemon juice. Toss well to coat the fruit evenly.

Add the Filling
Pour the fruit mixture into the pie crust, spreading it evenly. Dot the filling with 2 tablespoons of butter.

Top the Pie
If desired, roll out a second piece of dough for a top crust or create a lattice pattern. Seal the edges and cut slits for steam to escape.
Bake the Pie

Preheat the Oven
Preheat your oven to 425°F (220°C).

Bake the pie in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

Cool and Serve
Allow the pie to cool for at least 1 hour before serving. Serve warm or at room temperature with a scoop of vanilla ice cream and a dollop of whipped cream if desired.
