Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels. Set aside.

Make the Batter
In a shallow dish, combine cornmeal, flour, salt, black pepper, and cayenne pepper. Mix well to ensure an even distribution of the spices.

Prepare the Wet Mix
In another bowl, whisk together buttermilk and eggs until smooth.

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Catfish
Dip each catfish fillet first into the wet mix, allowing any excess to drip off, then dredge in the cornmeal mixture, pressing lightly to adhere.

Fry the Catfish
Carefully place the coated catfish fillets into the hot oil, making sure not to overcrowd the pan. Fry for about 5-7 minutes on each side or until golden brown and crispy.

Drain Excess Oil
Once cooked, transfer the fillets to a plate lined with paper towels to drain excess oil.
