Soak dried mushrooms

Place the dried shiitake mushrooms in a bowl and cover with 600 ml hot (not boiling) water. Let soak 25–30 minutes until softened. Reserve soaking liquid by gently pouring through a fine sieve or coffee filter into a measuring jug; discard any grit left in the sieve.

Simmer base

In a medium saucepan, combine the reserved soaking liquid (about 200–300 ml after sieving), remaining water (to reach about 1,100 ml total in the pan), and the 500 ml chicken or vegetable stock. Add sliced ginger, crushed garlic, and the white parts of the scallions. Bring to a low simmer over medium heat.

Reduce and season

Reduce heat to low and gently simmer, uncovered, for 25–30 minutes to concentrate flavors. Skim any foam occasionally. After simmering, strain the broth through a fine mesh sieve into a clean pot, discarding solids. Return broth to low heat and stir in light soy sauce, mirin, sea salt, and white pepper. Keep warm (do not boil). Taste and adjust seasoning; the broth should be delicate, umami-rich and balanced.

Prepare mushrooms

While broth simmers, clean fresh wild mushrooms: trim stems, tear or slice larger pieces into bite-sized pieces so that all are similar in size. Pat dry with paper towels—dry surfaces brown better.

Sear and caramelize

Heat a wide skillet or sauté pan over medium-high heat. Add the neutral oil and 1 tablespoon butter. When shimmering, add mushrooms in a single layer (work in batches if needed to avoid crowding). Let mushrooms sit undisturbed 2–3 minutes to develop color, then toss/turn and continue cooking until deeply golden, about 5–7 minutes per batch. Transfer browned mushrooms to a bowl and set aside.

Aromatic finish

Lower heat to medium, add remaining 1 tablespoon butter to the pan. Add minced shallot and garlic; sauté 1–2 minutes until translucent and fragrant. Return mushrooms to pan, add thyme, soy sauce, sugar, and optional sherry/sake. Stir and cook 1–2 minutes to deglaze and let flavors meld. Finish with lemon juice, sea salt, and black pepper. Adjust seasoning to taste. Remove from heat.

Keep warm

Cover the pan to keep mushrooms warm until serving, or hold at very low heat (do not overcook—mushrooms should remain tender and flavorful).

Portion mushrooms

Divide the sautéed wild mushrooms evenly among 4 warmed shallow bowls (about 110–120 g mushrooms per serving).

Ladle broth

Stir the warm superior broth once and ladle about 250 ml per bowl around the mushrooms so the fungi are partly submerged but still visible. If the broth appears too concentrated, dilute with reserved warm water or additional stock to taste.

Finish and garnish

Drizzle each bowl with a few drops of sesame oil, sprinkle toasted sesame seeds, scatter chive blossoms or chopped chives and a few microgreens on top for color and freshness. Serve immediately while hot.
