Method
Prep
Mix the sauce: in a small bowl combine vegetable stock, light soy, dark soy, oyster sauce, Shaoxing wine, sesame oil, sugar and salt. Stir to dissolve sugar and set aside.
Make cornstarch slurry by whisking cornstarch with cold water until smooth; set aside.
Cooking
Heat oil and aromatics
In a large wide skillet or wok, heat neutral oil over medium-high heat until shimmering. Add sliced ginger, minced garlic, and the white parts of the scallions. Stir-fry for 30–45 seconds until fragrant but not browned. If using dried red chili, add it now and briefly toast.
Add mushrooms and baby corn
Add shiitake mushrooms, wood ear fungus, and baby corn. Continue stir-frying 2 minutes until edges begin to soften and release aroma.
Add sauce and simmer
Pour the prepared sauce and reserved mushroom soaking liquid (if any) into the pan. Increase heat to bring to a gentle simmer, then reduce to medium. Cover partially and simmer 4–6 minutes until firmer vegetables are tender but not falling apart. Stir occasionally so vegetables cook evenly.
Thicken sauce
Give the cornstarch slurry a quick re-stir and slowly pour it into the simmering vegetables while stirring to distribute. Cook 30–60 seconds until sauce thickens and becomes glossy. Taste and adjust seasoning with additional salt or soy sauce if needed.
Finish
Remove from heat. Stir in the green parts of the scallions and drizzle sesame oil. Garnish with toasted sesame seeds and chopped cilantro if using. Serve hot.
