Rinse the rice

Place 2 cups jasmine rice in a fine-mesh sieve or large bowl. Rinse under cold running water, stirring and rubbing the rice gently with your hand, until the rinse water runs nearly clear (about 3–5 rinses). This removes excess surface starch and prevents clumping.

Optional short soak

After rinsing, transfer rice to a bowl and cover with cold water by about 1 inch. Let soak for 10–15 minutes to shorten cooking time and improve separate grains. Drain thoroughly in a fine-mesh sieve for 1–2 minutes.

Combine rice and water

Transfer the drained rice to a medium heavy-bottomed saucepan with a tight-fitting lid. Add 2 1/4 cups cold water and 3 tsp kosher salt. Stir once gently to distribute salt.

Add aromatics

Tuck 2 pandan leaves and 1 kaffir lime leaf (or a strip of lime zest) into the rice, pressing them slightly into the water so they are submerged. Dot the top with 1 tablespoon unsalted butter and drizzle 1/2 teaspoon toasted sesame oil over the rice. These are optional but add fragrant depth.

Bring to a simmer

Place the saucepan over medium-high heat and bring to a gentle boil uncovered, about 3–5 minutes. As soon as steam and bubbles break the surface, reduce heat immediately to the lowest setting that maintains a gentle simmer. Cover tightly with the lid.

Cook gently

Let rice steam, undisturbed, for 12–15 minutes. Avoid lifting the lid. After 12 minutes check: if all water is absorbed and rice looks set, proceed; if not, continue 1–3 minutes until water is absorbed but rice is not burning on bottom.

Rest off heat

Remove the pot from heat and leave covered for 10 minutes. The resting step lets residual steam finish cooking the grains and firms texture.

Finish & Serve

Fluff and remove aromatics

Uncover and remove the pandan and lime leaf or zest. Using a rice paddle or fork, gently fluff the rice from the edges toward the center to separate grains without crushing them.

Adjust seasoning and serve

Taste and adjust seasoning if needed (a pinch more salt). Transfer to a warmed serving bowl and serve immediately as a fragrant side for curries, grilled meats, or vegetable dishes.
