Duck & Marinade
Marinate the duck
Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. In a shallow dish combine Irish stout, 2 tbs soy sauce, brown sugar, 1 tsp minced garlic and 1 tsp black pepper. Add the duck breasts, skin-side down, turning to coat. Cover and refrigerate for 30 minutes to 1 hour.
Cook the duck
Remove duck from marinade and pat dry with paper towels (reserve marinade). Heat a dry skillet over medium heat. Place duck skin-side down and cook 6–8 minutes until the fat renders and skin is deep golden-brown. Flip and cook 4–6 minutes for medium (internal temp ~135°F/57°C). Transfer to a cutting board, tent loosely with foil and rest 8–10 minutes. Reserve pan fat for frying and keep cooked duck aside to slice thinly.
Reduce reserved marinade (optional)
Pour the reserved marinade into a small saucepan, bring to a simmer and reduce by half to concentrate flavors (about 5–7 minutes). Strain and set aside to use as a drizzle with the finished rice if desired.

Prepare eggs
Whisk together the 3 eggs, 2 tbs whole milk, 1 tsp salt and 1/2 tsp black pepper until just combined. Heat a wok or large nonstick skillet over medium-high heat, add 1 tablespoon neutral oil, pour in egg mixture and scramble gently until just set but still moist, 30–45 seconds. Transfer eggs to a bowl and set aside.
Fluff rice
Break up any clumps in the chilled cooked rice with your fingers or a fork so grains are separated and easy to stir-fry.
Vegetables & Aromatics
Heat the wok or skillet over high heat. Add 1 tablespoon neutral oil and the reserved duck fat (about 1–2 tbs) if available; if not, add an extra tablespoon oil. Add the diced onion and carrot and stir-fry 2–3 minutes until softened and starting to brown. Add the minced ginger and 1 tsp minced garlic; stir-fry for 30 seconds until aromatic. Add the thawed peas and the white parts of the scallions; cook 1 minute.
Sauce, Rice & Finish
Move vegetables to one side of the wok. Add the remaining 1 tablespoon oil and the chilled rice. Stir-fry the rice 2–3 minutes, breaking up any remaining clumps and letting it get lightly toasted in places. Add the soy sauce (3 tbs), oyster sauce, sesame oil, 1/2 tsp coarse salt and 1/2 tsp pepper. Toss thoroughly to coat all grains.
Add the scrambled eggs back into the wok and mix through the rice. Fold in the sliced duck breast, the green parts of the scallions, and grated Irish cheddar if using; stir just until everything is evenly distributed and cheddar is slightly melted, 1–2 minutes. Taste and adjust seasoning with additional soy sauce or salt if needed.
Finish with butter: push rice to the sides, add 1 tablespoon butter to the center to foam and swirl into the rice for shine and richness. Toss once more to combine.
Serving & Notes
Serve immediately while hot. Leftovers keep well refrigerated for up to 2 days; reheat in a skillet with a splash of water or broth to loosen the rice. If you prefer crispier duck, sear slices skin-side down briefly in a hot pan before serving.
