Cook and Prepare Sago

Boil sago

Bring 4 cups water to a rolling boil in a medium saucepan. Add the dry small tapioca pearls (sago) and stir immediately so they don't stick. Maintain a vigorous simmer and stir occasionally to prevent clumping.

Simmer until translucent

Cook the sago 8–12 minutes, depending on pearl size, until the pearls turn mostly translucent with a small white dot at center. Taste one to confirm chewy-but-cooked texture.

Rinse and cool sago

Pour the cooked sago into a fine-mesh sieve and rinse thoroughly under cold running water to stop cooking and remove excess starch. Drain well. If desired, transfer sago to a bowl of iced water for 1–2 minutes, then drain again. Set aside covered in the refrigerator while you prepare the rest.

Prepare Mango & Pomelo

Peel and dice mango: Using ripe mangoes, peel and dice enough flesh to yield about 2 cups. Reserve a few small dice for garnish if desired.

Segment the pomelo: Remove pomelo membranes carefully and separate into bite-size segments. Remove any large bits of pith. Measure 1 cup of prepared segments and set aside.

Optional puree: If you prefer part-smooth texture, reserve 1 cup of the diced mango and pulse briefly in a blender or food processor with 2 tablespoons coconut milk until smooth; leave the rest as diced pieces.

Make Mango-Coconut Cream

Combine liquids and sweetener: In a mixing bowl, whisk together the coconut milk (1 cup), sweetened condensed milk (3 tablespoons), lime or lemon juice (1 teaspoon) and granulated sugar (1 tablespoon, optional). Taste and adjust sweetness. The lime keeps the mango bright.

Thin if necessary: If the mixture is too rich or thick for your preference, add 1–2 tablespoons cold water or a few small ice cubes and whisk until smooth. Chill briefly if needed.

Assemble and Chill

Combine components: In a large mixing bowl, gently fold the drained sago into the mango puree (if using) and diced mango. Add the pomelo segments and fold carefully so fruit doesn't break up.

Add mango-coconut cream: Pour the coconut-mango cream over the fruit-sago mixture and gently combine until evenly coated. Taste and adjust sweetness or lime if needed.

Chill: Cover the bowl and refrigerate at least 30 minutes to 1 hour to let flavors meld and the dessert become thoroughly chilled. For best texture, serve cold.

Portion: Spoon the chilled mango-pomelo-sago into individual bowls or glasses. If using, place crushed ice in the bottom of bowls before spooning mixture on top.

Garnish: Top with reserved mango dice, a few mint leaves and toasted coconut flakes for aroma and texture.
