Broth Base

Method

Broth Base

1

Soak the dried shiitake mushrooms in 1 cup of warm water for 20–30 minutes until softened. Reserve the soaking liquid by straining it through a fine sieve and set aside (this adds umami).

2

In a large pot, combine the chicken stock, fish stock (if using), reserved mushroom soaking liquid (careful of sediment), sliced ginger, and white parts of the scallions. Bring to a gentle simmer over medium heat.

3

Add Shaoxing wine, then reduce heat to low and let the broth simmer gently for 15 minutes to marry flavors. Skim any foam or impurities from the surface. Keep the broth hot but not boiling.

Prepare Shark's Fin Substitute & Crab

4

If using dried cellophane noodles or konjac strands as the shark's fin substitute, soak or blanch them per package instructions until tender, then drain and shred into bite-sized strands (about 1–2 inch lengths). If using fresh substitute that’s already prepared, tear into thin strands.

5

Gently pick through the crab meat to remove any cartilage or shell fragments. If using canned crab, drain well and pat dry with paper towels to avoid diluting the sauce.

6

Lightly beat the egg whites until frothy and set aside. The egg whites will be used to create silky ribbons in the finished soup.

Aromatics & Vegetables

7

Heat 2 tbs oil in a wide skillet or wok over medium heat. Add minced garlic and julienned ginger and stir-fry for 30–45 seconds until fragrant but not browned.

8

Add the julienned bamboo shoots and optional baby bok choy or snow peas. Stir-fry for 1–2 minutes to warm and soften vegetables while retaining some crunch. Remove from heat.

9

Add the prepared shark's fin substitute strands to the pan and toss gently with the aromatics for 1 minute to coat and warm through.

Combine & Braise

10

Strain the hot broth quickly into the skillet or return the skillet contents to the large pot with the simmering broth. Bring the combined mixture to a gentle simmer over medium-low heat.

11

Stir in light soy sauce, oyster sauce, white pepper, and salt. Taste and adjust seasoning — it should be savory and slightly briny but not overly salty.

12

Add the crab meat to the simmering broth and stir gently to distribute. Reduce heat to low, cover, and let the bowl of ingredients braise gently for 6–8 minutes so the crab warms and the strands soak up flavor.

Thicken & Finish

13

In a small bowl, whisk the cornstarch with the 4 tbs cold water to form a smooth slurry without lumps.

14

With the broth at a gentle simmer, slowly pour the cornstarch slurry into the pot while stirring constantly to avoid clumping. Cook for 1–2 minutes until the broth slightly thickens to a glossy, velvety consistency.

15

Turn off the heat. Slowly drizzle the beaten egg whites into the hot broth in a thin stream while gently stirring in a circular motion to create delicate egg ribbons.

16

Stir in sesame oil and the reserved chopped scallion greens. Adjust seasoning one last time.

Serve & Garnish

17

Ladle the braised shark's fin with crab meat into warmed shallow bowls, ensuring each portion has both crab and the fin strands.

18

Garnish with cilantro leaves and a sprinkle of toasted sesame seeds if using. Serve immediately with steamed rice or as part of a multi-course meal.
